Pumped Up Frozen Pizza with Parmesan

Vibrant in color and flavor, this dip is a welcome addition to any party or lunch box. Pair with crackers, grilled bread, crudites, or even baby carrots for younger munchers (kids love green pea hummus!)
For an elevated version, drizzle the finished dip with balsamic glaze and add a sprinkle of cracked black pepper.
3 cups frozen, thawed green peas
1 cup Sartori Classic Shaved Parmesan, divided
2 tablespoons lemon juice
2 ½ tablespoons extra-virgin olive oil
1 tablespoon hot water
1 tablespoon chopped mint
¼ teaspoon salt
¼ teaspoon black pepper
Optional: shaved Parmesan, Extra-virgin olive oil, fresh mint, green peas
Combine the peas, ¾ cup cheese, and the next 6 ingredients in a blender or food processor; process until very smooth. If you prefer a thinner dip, blend in additional water, 1 teaspoon at a time, to desired consistency.
Spoon hummus into a bowl and stir in the remaining ¼ cup cheese. Top with additional Parmesan, olive oil, mint leaves, and peas if desired. Serve with seasonal vegetables, crackers or other dippers of choice. Store any leftovers covered in the refrigerator.
