Plymouth, Wisconsin (April 16, 2026) - Sartori® Cheese, a family-owned artisan cheese company based in Wisconsin, proudly announces Erin Radtke as its newest Master Cheesemaker. Radtke will be joining an elite group of cheesemakers who have demonstrated extraordinary dedication to craftsmanship, education and quality.
Radtke’s path to becoming a Master Cheesemaker is personal and uniquely local, having grown up next door to the very plant where she now crafts cheese.
“When I was a little kid, I used to ride my bike around the block where Sartori is now based,” Radtke recalled. “It’s surreal to think I used to live so close to the plant and now I'm a Master Cheesemaker here. It feels like coming full circle.”
Radtke began working at the Wisconsin plant in 2004, years before it became part of Sartori, and has since worked in numerous departments including packaging, boxing, waxing, wheel production and leadership roles.
The Master Cheesemaker certification process is notoriously demanding, requiring years of coursework, specialization and a comprehensive exam that can take more than 40 hours to complete. Radtke’s mastery focuses on Open-Class Hard and Parmesan, cheeses that showcase both technical precision and creative innovation.
“This honor is a huge accomplishment for me, personally and professionally. It takes a long time to become a Master Cheesemaker,” Radtke said. “Understanding and learning all the nuances of cheesemaking is incredibly rewarding and I couldn’t be more excited to continue my craft at Sartori.”

Plymouth, Wisconsin (June 2, 2025) - On May 21, 2025, Sartori Cheese Company presented scholarships to five students, local to Plymouth and Antigo, renewable over the next four years.
The five women each garnered attention for a unique reason.
Ali Limberg is pursuing a degree in Advertising and Graphic Design at Grand Canyon University.
Ella Morrison is earning her Pre-Health Science degree from St. Norbert College.
Mia Jo Schroepfer is pursuing a degree in Agri-Business Dairy Technology at Fox Valley Technical College.
Emma Adleman is pursuing a degree in Dairy Science at UW–River Falls with a minor in Agricultural Business.
Avalyne Fischer is pursuing a degree in Accounting at Loyola University Chicago.
Each recipient received a $3,000 renewable scholarship. To maintain the renewable award, recipients must earn a minimum of a 3.0 GPA, and their parents or grandparents must still be employed by Sartori Cheese Company or in partnership as a family farm of Sartori Cheese Company.
For 86 years, the Sartori family has been actively involved in the community, providing employment opportunities and contributing through monetary and in-kind donations, with the company’s enduring legacy defined by the fundamental values of family and commitment. In 1994, Sartori took this commitment one step further by initiating a scholarship program aimed at fostering higher education. Since its inception, the company has awarded scholarships to over 100 children or grandchildren of our Team Members and Family Farms in both the Plymouth and Antigo communities. These scholarships have provided financial support for students pursuing formal secondary education.

This week, the company is proud to announce that Sartori cheesemaker Jeremy Werdeo is the company’s latest to earn the prestigious title of Master Cheesemaker in Cheddar and Parmesan.
Werdeo has been at Sartori for more than 22 years after joining the company in 2003. Starting with a role in the packaging department, he eventually entered cheesemaking as a beginner and climbed his way through the ranks to become a master of the craft.
“Cheesemaking is a collective effort, and this honor reflects the hard work of the entire team at Sartori,” said Werdeo. “Every day, my goal is to help bring our farmers’ milk to life by making great cheese. I couldn’t be more excited to continue doing that alongside my team.”

Each Master Cheesemaker candidate must complete more than 80,000 hours of cheesemaking and boast over ten years of experience before being accepted into the program. They must also possess five years of experience with the specific variety of cheese for which they wish to receive the certification. Once accepted, candidates are required to complete three years of rigorous training and coursework.
Werdeo received the Master Cheesemaker honor on April 17 at the U.S. Cheese Championship awards banquet at CheeseCon in Madison. In the state of Wisconsin, there are more than 1,200 licensed cheesemakers, but fewer than 100 hold the prestigious title of Master Cheesemaker. Sartori expects to have another of its cheesemakers attain the Master Cheesemaker title in the coming years.

After arriving in the United States from Italy, Paolo Sartori chose to settle in Wisconsin thanks to its rich history of agriculture and dairy farming. To this day, Sartori credits its strong relationships with local dairy farmers as a key reason why it has produced fresh, high-quality cheese since the company’s founding.
Fourth-generation family member Bert Sartori has served as the brand’s CEO since 2022, succeeding Paolo (his great-grandfather), Joe (his grandfather) and Jim (his father) as leaders of the company. Plymouth, Wisconsin (April 25, 2022) –Sartori® Cheese is thrilled to announce that Ken Kane has achieved his Master Cheesemaker certification in both Parmesan and Romano.
Ken Kane joined Sartori® in 2005 in an entry-level role eventually working his way up to become the plant manager of Sartori’s® West Main Creamery & East Main Cave facilities. He has spent the last 17 years perfecting his cheesemaking ability while supporting the growth and development of dozens of other award-winning Sartori® cheesemakers.
“The thing I love about cheesemaking is really the art. It’s ever-changing, it’s living,” Master Cheesemaker, Ken Kane said, “there are lots of little pieces that we’re adding and adjusting or monitoring to make a consistent high-quality cheese, day in and day out.”

Every Master Cheesemaker candidate has upwards of 80,000 hours of cheesemaking before being accepted into the program. Every cheesemaker must be a licensed cheesemaker for 10 years with at least five years of experience in the specific variety they wish to be certified in. Sartori also has a leading Master Cheesemaker apprentice program that helps hone the cheesemaker’s skills and helps prepare them for the final steps of their training. Once accepted into the prestigious Master Cheesemaker program, it requires 3 years of rigorous training and coursework. Plymouth, Wisconsin (March 23, 2022) – Yesterday, Wisconsin Governor Tony Evers signed Senate Bill 827 into law at Sartori® Cheese in Plymouth, Wisconsin.
The bill, authored by State Senator Joan Ballweg (R-Markesan) and State Representative Tony Kurtz (R-Wonewoc) provides funding for the new Wisconsin Initiative for Agricultural Exports (WIAE), a $5 million, five-year program intended to boost the sale of Wisconsin dairy products, crops, and meat internationally. Wisconsin Secretary of Agriculture, Randy Romanski, and Wisconsin Cheese Makers Association Executive Director, John Umhoefer, were also in attendance.
The signing took place in Sartori® Cheese’s historic East Main Caves in Plymouth. Sartori®, a family-owned specialty cheese company based in Wisconsin, is one of the world’s most award-winning cheesemakers. Over the past decade, Sartori® has steadily expanded their specialty cheese export business and the company expects this new funding to help accelerate growth.

Festivities begin at the Plymouth Arts Center (520 E. Mill Street Plymouth, Wisconsin) at 8:30p.m. with live music by Bella Musik followed by the Honeygoats. The Big Cheese Drop begins at 10p.m. Festivities continue through 12:30a.m. with music and a complimentary champagne toast at midnight.
Plymouth, Wisconsin (March 31st, 2021) – Sartori® Cheese is excited to announce a $47,000 donation to Make-A-Wish Wisconsin. For the tenth season in a row, Sartori® partnered with Green Bay Packer kicker, Mason Crosby, to support Make-A-Wish Wisconsin. Sartori® donates $1,000 for each regular-season and $1,500 for each post-season completed field goal. Crosby had a perfect 2020 season converting all regular & post season kicks, totaling up to $22,000. Over the past ten seasons this partnership has generated over $300,000 in donations.

Plymouth, Wisconsin (December 31st, 2020) – New Year’s Eve celebrations will look a little different for many this year in the community of Plymouth, Wisconsin, home of Sartori® Cheese. The annual Sartori® Cheese Drop, nationally lauded as one of the country’s quirkiest New Year’s Eve traditions, will be going virtual in the interest of public safety.
This event celebrates the city of Plymouth, known as the Cheese capital of the world. For the past 14 years the event has drawn thousands as the community comes together to welcome in the new year. The crescendo of the event is marked by a countdown and the lowering of a giant wedge of Sartori’s world award-winning BellaVitano® Gold Cheese.
Following CDC and Wisconsin State Guidelines, the 2020 Sartori® Cheese drop was filmed in partnership with the Plymouth Arts Center and the Plymouth Fire Department. Jim Sartori, Chairman of Sartori® Cheese, and his wife, Jan, were onsite to observe the tradition. “It wouldn’t feel like New Year’s Eve in Plymouth without the Sartori® Cheese Drop – we’re very appreciative to the Plymouth Art Center & Plymouth Fire Department for helping to keep the tradition alive this year.
